I'd walked by this big jar of mystery at Costco quite a few times over the months.
I was then shopping with a friend and she scooped it right up and I'm so glad she did.
It is tasty and comforting, I still haven't met a ginger tea I didn't like.
When it's scooped out of the jar it is the consistency of marmalade. When it is put into hot water it reminds me of the scoby in kombucha.
